The Farm Lambs of Quercy

Specific characteristics of the Farm Lamb of Quercy

Agneau fermierOrigin :

  • Lamb born, bred, fattened, and slaughtered within a defined zone : the Lot and neighbouring cantons of the Corrèze (please see Indication Géographique Protégée published in the French Government Publication of the EC dated June 21, 1996).
Conformation :
  • Animals of U-R-O conformation.
Breed :
  • The major part of the livestock is born into the breed Causse and Lot.
Feeding :
  • The farm lamb of Quercy is fed from the ewe up to a minimum age of 70 days. The complementary feed consists of cereals and products of a selected list of vegetable food.
Colour of the carcasse : :
  • Meat of very light or light colour.
Quality of fat :
  • 2 and 3 - white and firm fat.
Age :
  • Less than 12 months.
Weight of the carcasses :
  • Less than 20 kg.

- All farm lambs of Quercy are slaughtered at Gramat. A very intensive selection in the slaughterhouse is used to indicate the best ones. Only the youngest lambs, in a perfect health can aspire to the Red Label. Finally, only one of every three lambs born will be sold under the designation Farm Lamb of Quercy (Agneau Fermier du Quercy).
